Fermentation Wisdom Series No. 6
Organic Pineapple Vinegar, Ripened by the Sun: A Refreshing Tang That Lets You Finish the Soup to the Last Drop
“I love rich Japanese ramen, but after a while it starts to feel greasy and heavy…”
To solve this problem, we’d like to introduce our “Pineapple Vinegar”, additive-free and made in-house by our curated organic seasoning shop.
It’s crafted following the natural fermentation wisdom passed down in Thailand.
✅ No preservatives, MSG, or artificial flavorings
✅ Fruity, mellow acidity that’s gentle on the palate
✅ None of the sharp bite of ordinary distilled vinegar or synthetic vinegar
🍍 Recommended Dishes to Enjoy the Full Flavor of the Vinegar
Cold Ramen
The most luxurious way to savor the fruity, mellow acidity of pineapple vinegar is our Cold Ramen with a specially made sauce. It slides down smoothly and refreshingly, even on the hottest days.
Cold Ramen (Chashu Chicken): 80 THB
Tender, juicy, and healthy chashu chicken, perfectly matched with a refreshing fruit vinegar sauce.
Cold Ramen (Chashu Pork): 100 THB
Juicy, slow-simmered chashu pork, its savory flavor sharpened by the pleasant tartness of pineapple vinegar. A truly satisfying bowl.
Gyoza (6 pieces): 60 THB
Choose your style: pan-fried, boiled, or deep-fried. Pair them with our pineapple vinegar dipping sauces:
🥢 Ponzu Sauce: Thai lime (manao), soy sauce, and pineapple vinegar. Bright, citrusy, and refreshing.
🥢 Miso Sauce: Miso, sugar, and pineapple vinegar. Rich and savory with a mellow, tangy finish.
💡 Serving Tip:
First, taste the soup as it is to enjoy its true richness. Then, partway through, add 2–3 drops of pineapple vinegar. The aftertaste becomes surprisingly light, letting you finish every last drop of the soup with ease.
I can also update the Thai or Japanese version to match if you’d like.
