Founded in 1337 (the second year of the Engen era), the business is said to have started as a brewery. During the Edo period, the location was situated eight cho (approx. 810 meters) west of Okazaki Castle, the birthplace of Tokugawa Ieyasu. Because of this distance, the area was named Hatcho Village, and the miso produced there came to be known as Hatcho miso.
Today, on that very same site, the company remains dedicated to inherited traditional brewing methods. Heavy stones are stacked in a conical shape atop wooden vats, and the miso is naturally aged through two summers and two winters to preserve its authentic flavor.
